US-based microgreens supplier AeroFarms has launched its latest product, Micro Bok Choy, at major US retailers, such as Giant Food, H Mart, and Whole Foods Market.

Micro Bok Choy is part of AeroFarms’ diverse portfolio of microgreens, which are categorised under the company’s unique FlavorSpectrum.

This spectrum aligns each product with a specific flavour profile, where Micro Bok Choy is marked as “purple,” indicating a mellow and slightly sweet taste. The microgreen serves as an ideal substitute for traditional salad greens due to its texture and size.

The launch of Micro Bok Choy provides a versatile option for various dishes, including sandwiches, stir-fries, and smoothies.

AeroFarms CEO Molly Montgomery said: “At AeroFarms, our obsession with flavour fuels our innovation, but nutrition is our true passion. Microgreens contain four-to-40 times more nutrients than their mature vegetable counterparts.

AeroFarms said that all its microgreens, including Micro Bok Choy, are cultivated at the company’s indoor vertical farm in Danville, Virginia.

Utilising patented aeroponics technology, AeroFarms grows its products with 90% less water and 230 times less land than conventional farming methods.

The absence of pesticides ensures the greens are ready to eat without washing, offering consumers a nutritious and sustainable choice.

Furthermore, AeroFarms holds a significant position in the US microgreens market, with over 70% retail market share.
