Vanilla is in hot demand as a flavouring across the food industry, a complementary addition to chocolates, cakes and a plethora of sweet drinks. The cultivated form, however, is hard to source and increasingly expensive. Ingredients Insight talks to Corinne Duffy, technical marketing manager at Solvay Aroma Performance, about how the company’s vanillin flavourings satisfy consumer demand for more natural ingredients while avoiding the need to rely on diminishing global supplies of the elusive tropical bean.
